A delicious salad medley that adds zest to a barbeque! You may wonder at the proportion of onion and diced tomato – that’s the way it’s supposed to be. Some even totally exclude the tomato dice and use only tomato paste.
1 large head onion, diced fine
Salt
Pepper
1 bunch fresh parsley, chopped
1 ripe juicy tomato, diced fine
1 clove garlic, crushed
2 mL (1/2 tsp) ground cumin
pinch of red hot pepper flakes
5 mL (1 tsp) tomato paste
10 mL (2 tsp) lemon juice
25 mL (2 tbsp) olive oil
Place diced onion in a bowl. Add salt and pepper, and crush the onions slightly with your fingers, until somewhat wilted. Add parsley, diced tomato and the rest of the ingredients. Adjust seasonings to taste.
Serve as accompaniment to shish-kabab.
